Craft Your Own Simple Syrup for Better Cocktails at Home

Just like a pinch of salt can elevate a dish, a touch of sugar can completely transform a cocktail. Simple syrup, a mixture of sugar dissolved in water, has a history rooted in its practicality and versatility. It was initially called “simple” by pharmacists to distinguish it from more complex syrups containing medicinal herbs, according to Oxford Reference. Its use in cocktails became popular in the 1860s, as a way to ensure sugar dissolved evenly in cold drinks. Basic Simple Syrup 1:1

This is the go-to simple syrup recipe you’ll find in most cocktail guides. It’s light, pleasantly sweet, and never overpowering. Ideal for drinks where a touch of dilution is welcome—think sparkling cocktails or anything served in a Collins glass. It also works great for sweetening coffee, tea, or any beverage that could use a smooth, balanced lift.

Ingredients

  • 1 cup granulated white sugar
  • 1 cup water

Combine sugar and water in a small saucepan. Heat on a stove top over medium heat stirring regularly until all of the sugar is dissolved. Cool and store in an airtight container in the fridge for up to a month.

Rich Simple Syrup 2:1

Rich 2:1 simple syrup is a slightly stronger sweetener made with two parts sugar to one part water—and it’s one of our favorites behind the bar. It’s perfect for bolder cocktails where you want to add sweetness without watering things down. Bonus: it brings a smooth, velvety texture to your drinks, and since it’s more concentrated, you can use less of it while still getting that just-right balance.

Ingredients

  • 2 cup granulated white sugar
  • 1 cup water

To make this richer syrup, combine two cups sugar with one cup water in a small saucepan. Heat on the stovetop over medium heat stirring regularly until all sugar is dissolved. You’ll know it’s ready when all of the sugar is dissolved and the syrup is clear. Cool and store in an airtight container in the fridge for up to a month.

Honey Simple Syrup

Honey is a delicious natural sweetener—and it brings more to the table than just flavor. Packed with antioxidants and known for its soothing properties, it’s a great addition to cocktails when used the right way. Because honey is a bit too thick to mix smoothly into cold drinks, turning it into a simple syrup is the way to go. The fun part? There are so many types of honey out there, each with its own unique flavor.   • 1/4 cup hot water

We prefer our honey simple syrup to be rich to avoid diluting the honey flavor too much. We also like making smaller batches of honey syrup since it’s easy to make and not as common in recipes as other simple syrups. To make, combine honey and hot water in a small pitcher. Stir until all the honey is dissolved. Cool and store in the fridge for up to 2 weeks.
