The Bee’s Knees – A Bright & Honeyed Spring Classic

Bees Knees Cocktail Speed Shift Distillery EnGIN

The Bee’s Knees is what happens when bright citrus, silky honey, and a proper pour of Speed Shift EnGIN all hit the throttle at once. This Prohibition-era classic is crisp, botanical, lightly sweet, and dangerously easy to love.

Our EnGIN brings a Pacific Northwest edge to the ride – botanical gin, lively citrus, and just enough swagger to keep things interesting. Fresh lemon keeps it snappy, while honey smooths out the corners for a cocktail that feels equally at home at golden hour on the patio or parked fireside after a long day.

Refreshing, spirited, and smooth enough to make you forget it packs a punch. Perfect for enjoying at home on a nice spring day. Cheers!

Ingredients for Bee’s Knees

  • 4 oz EnGIN
  • 2 oz fresh squeezed lemon juice (about 1 lemon)
  • 1 oz Honey Syrup (See step 1)
  • Garnish: Lemon Twist

Steps for Bee’s Knees

1

To make the honey syrup, combine equal parts honey and warm water. (2 tablespoons of each is perfect for a couple cocktails.) Stir together in a small saucepan over low heat or give it a quick warm-up in the microwave until the honey fully melts into smooth, golden bliss. Set aside to cool slightly.

2

Before you juice your lemon, use a vegetable peeler, or a short, sharp knife to pull a few strips of zest for garnish. That fresh citrus twist adds the perfect finish to your cocktail.

3

Fill a shaker with ice and pour in the honey syrup, fresh lemon juice, and EnGIN. Seal it up and shake hard until the outside of the shaker is frosty cold – about 30 seconds.

4

Strain into a pre-chilled coupe or martini glass. Give your lemon twist a quick squeeze over the drink to release those bright citrus oils, then drop it in for the final touch. Best enjoyed ice-cold and preferably somewhere with a little sunshine.
