Slightly sweet, colorful and oh so summery, this Watermelon Daiquiri made with rum and fresh fruit is both thirst quenching and refreshing. Along the same lines as the Classic Daiquiri, but with significantly less lime, this fruit forward cocktail is truly outstanding. After a making these a few times, I now also recommend choosing seedless watermelon and waiting to make this particular cocktail until watermelons are in season. (For us located here in the Pacific Northwest, the closest watermelons come from California between May – September.)
This recipe easily doubles with minimal effort as long as your blender can handle the watermelon.
